These sandwiches are crazy easy to make and only take a little work from you. A quick fix light meal in a flash. This appetizer is absolutely delicious, attractive, filling, and a crowd-pleaser.

I LOVE Avocados and the freshness of MINT takes this to a new level!! I make fresh guacamole almost every day. Sometimes, I use guacamole in this sandwich which gives a great flavor too! Vikas and I love these bars. If I need something quick to fulfill my appetite in the evening, I make these sandwiches for both of us.

It fits a lot of brackets for when you are having guests over with limited diets or for a quick visit, it has so much flavor that it pleases everyone!

Method:

  1. Remove the sides of bread and cut it into 4 slices. I have used brown bread for this recipe but any white, brown, or multigrain bread can be used to make these sandwiches.

2. Mash avocados with chopped jalapenos and fresh mint.

3. Spread the avocado paste on the bread. Top it with cheese and spread mashed avocados again. Put tomatoes on top of it and sprinkle oregano, black pepper, or red chili flakes.

4. Garnish along with dried cranberries as it gives a wonderful flavor to the bars.

Ingredients

  • 2 avocados (peeled and mashed)
  • 2 bread slices (cut into square pieces)
  • 8 mozzarella cheese slices
  • 2 tbsp Jalapenos (chopped)
  • 2 tbsp mint leaves (chopped)
  • 5 cherry tomatoes (cut into halves)
  • 1 tbsp dried cranberries

Instructions

  1. Cut each bread slice into 4 squares and set them aside.
  2. Mash avocados. Mix chopped jalepenos and mint leaves to it.
  3. Chop the grape tomatoes into halves.
  4. Spread mashed avocado mixture on top of every squared slice.
  5. Put a slice of cheese on top of it. Then add another layer of the mixture.
  6. Sprinkle red chili flakes or black pepper. Put tomatoes on them.
  7. Garnish with cranberries. It also adds a great flavor to the sandwich. Serve immediately!
