Guacamole Grilled Cheese Sandwich

Simple, quick and healthy breakfast to start your day!

I love avocados, and who doesn’t? Whenever I crave for something healthy, this is my go-to sandwich. I peel avocados, slice it up or mash them, add some other veggies, put cheese and just grill it. Sometimes, when I have already made guacamole, I just put it on bread, toast it, and tada!!!

Here are the step by step pictures for the recipe:

1) First of all, gather up all the ingredients and chop them.

2) Peel and scoop out the avocados in a bowl. Mash them with a fork or potato masher. Add the rest of the ingredients and mix well.

3) Take two slices of bread and apply butter on both sides.

4) Throw some baby spinach on one slice of the bread.

5) Put cheese on top of it.

6) Spread guacamole on top of cheese.

7) Use a pan, toaster, griddle or panini maker to toast the sandwich.

8) Cut the sandwich in the shape of traingles or squares as you like. Serve it when it’s still warm!

Variations

1. I have used whole wheat bread for this sandwich but you can use any type of bread slices for this recipe – white bread, wheat bread, multi-grain or any bread of your choice. Use non-traditional bread – baguette, a wrap, focaccia, or a bagel, if you like.

2. Cheese – cheddar, feta or goat cheese will work too. Skip it, if you want.

3. Veggies – Add spinach or kale or mushroom or black olives.

4. Use pan or toaster or griddle or panini maker to toast it. I used panini maker but just covered the sandwich instead of pressing it like panini. Otherwise, it will push out all the ingredients out instead of just toasting the bread and warming up the cheese. Also, you can toast the bread before hand and add the ingredients later, if you want.

Ingredients

  • 2 small avocados
  • 2 slices whole wheat bread
  • ¼ cup unsalted butter
  • 1 garlic (chopped)
  • 1 slice american cheese
  • ½ cup chopped onion
  • 1/4 cup chopped tomato
  • 1 tbsp serrano pepper
  • 1 tbsp finely chopped cilantro
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup baby spinach
  • ¼ tbsp sea salt
  • ¼ tbsp ground black pepper (optional)

Instructions

  1. Mash your Avocados – Slice the avocados in half and remove the pit. Spoon out the flesh and add to a bowl. Use a potato masher or a fork to mash the avocados.
  2. Add chopped onion, garlic, tomato, serrano pepper, sea salt, cilantro and lemon juice to the bowl of avocados. Mix well.
  3. With a butter knife, spread butter on each slice of bread.
  4. To assemble the sandwich, place 2 slices bread on a work surface or a plate.
  5. Put spinach and cheese on one slice.
  6. Spread the freshly made guacamole on top of the cheese and cover with another slice of bread. Press gently.
  7. Heat a large skillet or pan or use panini maker to toast the sandwich over medium heat.
  8. Drizzle some olive oil or butter to toast the sandwich, if needed.
  9. Check after 2 to 3 minutes and then flip the sandwich.
  10. Check if the other side has been toasted by turning over the sandwich. When done, then remove the toasted guacamole sandwich.
  11. Slice the guacamole sandwich into triangles or square.
  12. Serve immediately with any sauce or dip.

Notes
