It only uses simple ingredients and can be made in under 15 minutes for a simple, quick, and easy salad.
This salad is always a crowd-pleaser and is perfect for any summer party.
INGREDIENTS
For the dressing you’ll need:
Whisk together the following ingredients. Store them in an airtight jar or container in the fridge for up to 1 week, or use them immediately.
- 1/4 cup orange juice concentrate
- 2 tbsp olive oil
- 1/2 tbsp lemon zest
- 1 tbsp honey or maple syrup
- 2 tbsp pumkin seeds
- Salt & pepper
For the salad you’ll need:
- 2 ripe peaches
- 8-10 basil leaves
- 2 cups arugula
- 1/2 cup pistachios, roughly chopped

HOW TO MAKE SUMMER ARUGULA PEACH SALAD FROM SCRATCH?
- Make dressing– Whisk together orange juice concentrate, oil, zest, honey or maple syrup, pumpkin seeds, salt and pepper.
2. Toss remaining ingredients– This includes arugula, basil, peach, and pistachios.

3. Enjoy– Pour the dressing over the salad. Serve immediately.
HOW TO MAKE THIS A DINNER SALAD:
This side salad could easily be made into a dinner salad with the addition of kidney beans, chickpeas, or baked tofu.
VARIATIONS FOR ARUGULA PEACH SALAD
Try other greens– Such as kale, spinach, butter lettuce, mint, or a combination of many other greens.
Add nuts– Such as pine nuts, cashews, pecans, almonds, or walnuts. Make sure that they are toasted or even candied for better flavor.
Dried fruits– Such as dried cherries, raisins, blueberries, apricots, or mango.
Add grapes– For additional sweetness.
Add grapefruit– The tart flavor will balance the peaches beautifully.
Cheese toppings– Such as goat, or fresh parmesan cheese.
Add other veggies– Like finely diced celery, cucumber, or even onions.

STORAGE
Refrigerate– This salad tastes best when served immediately. Leftovers cannot be stored for later because the salad will become soggy. However, you can store the salad and dressing separately for 2 days in the fridge and mix right before serving.
Freeze– Salad can not be frozen due to the high water content. It will become wilted and soggy. You can freeze the salad dressing in a freezer-safe container for up to 2 months, if you like. Then just thaw to room temperature to serve.
