Mint Raita

Description

Mint Raita is a super easy recipe to make that goes with a variety of dishes. Serve this as a side to pulao, biryani and paranthas.


Ingredients

  • 12 cups mint leaves
  • 2 cups yogurt or curd
  • ½ inch ginger
  • 2 green chilli (chopped)
  • ½ tbsp lemon juice
  • 1 tbsp salt
  • ¼ tbsp cumin powder
  • ¼ tbsp chaat masala (optional)

Instructions

  1. Remove stalks or stems from mint leaves. Rinse the leaves under cold water for a few mins using a colander and dry them.
  2. Blend mint leaves, green chilies, ginger, salt, cumin powder, and chaat masala until smooth. Add 1-2 tablespoons of water as needed.
  3. Add 1 tablespoon of lemon juice and mix well.
  4. Put curd or yogurt in a mixing bowl. Whisk it until reached the desired consistency. 
  5. Add a tablespoon of mint paste to the yogurt and mix it.
  6. Garnish with cilantro leaves but it's totally optional.
  7. Serve this as a side to pulao, biryani, and paranthas.

Notes

I always make this paste in bulk and use this as a mint chutney as well.
